This late morning meal that involves a combination of breakfast and lunch isn’t just suitable for adults but also kids. 1. Banana-Bread Flapjacks

This is not just a fun brunch idea but also delicious and deeply engaging. You can enjoy breakfast and lunch together by eating bread & banana with your favorite cup of tea or coffee. This is an amazing pancake recipe that will leave you satiated for hours.

Ingredients

  • 2 eggs
  • Half a spoonful of baking powder
  • Half a cup of well-chopped toasted-pecans
  • Quarter a cup of buttermilk
  • Quarter a cup of melted unsalted butter
  • A cup of ripe banana (mashed) plus a few slices for toppings
  • 3 tablespoons of brown sugar
  • 2 cups of all-purpose flour
  • 2 spoons of kosher salt

Preparation

  • Use a bowl to mix pecans, salt, baking powder, and the flour together.
  • Use another bowl to mix butter, buttermilk, eggs, and mashed bananas.
  • Add the content of these two bowls together and thoroughly mix them.
  • Use a large non-stick skillet to cook pancakes of preferred size. 
  • Using the baking sheet, place all your pancakes in a single layer. Put them in an oven with an average temperature of 175 degrees-Fahrenheit for around 30 minutes.

Serve with toasted pecans and the sliced bananas as toppings together with your favorite breakfast drink.

2. Crème Brulee French-Toast

This is a nutritious decadent that’s suitable for kids and adults. It’s an easy-to-make brunch that requires you to soak the bread you’ll use overnight in custard.

Ingredients

  • Half a cup of half & half
  • 6 eggs
  • Half a tablespoon of ground nutmeg
  • Half a cup of brown sugar
  • Quarter a tablespoon of salt
  • 2 cups of milk
  • 2 tablespoons of orange juice
  • A tablespoon of vanilla extract
  • One loaf of French bread
  • 4 tablespoons of melted butter

Preparation

  • Thoroughly mix half & half, orange juice, vanilla extract, salt, milk, eggs, and nutmeg in a bowl.
  • Use a baking sheet (rimmed) to lay the bread and pour the mixture over all the bread pieces.
  • Use a plastic wrap to cover the slices of bread and leave the package overnight in the fridge.
  • Bake the slices of bread in an oven with 350 degrees Fahrenheit.
  • Mix the brown sugar and melted butter in a bowl and then spread the mixture on another baking paper
  • Place the slices of bread on this mixture ensuring every piece is covered
  • Bake them for another 20 minutes or so, flipping each piece after about five minutes.
  • Serve while warm with your favorite drink.

3. Green Smoothie Bowl

If you are looking for a vegan-friendly brunch idea, then this is one of the best options for families. This smoothie bowl is even good for young kids who still need nutrients for growth and development.

Ingredients

  • A peeled avocado
  • A peeled mango
  • A cored apple
  • A dragon fruit
  • 250 ml of almond milk
  • 150 mg of mixed berries

Preparation

  • Put the avocado, almond milk, mango, spinach, and the apple in a blender and then blitz until the combination is thick and smooth. 
  • Serve in a bowl and then add the mixed berries and slices of the dragon fruit as toppings

4. Griddled Cornbread Plus Avocado And Deviled Eggs

This is a vegetarian-friendly brunch that can lighten up your family’s mood.

Ingredients

  • 2 eggs
  • Half green chili (sliced)
  • Half tablespoon of Tabasco sauce
  • 400 g of cherry tomatoes
  • A tablespoon of caster sugar
  • Some coriander leaves
  • 5 slices of cornbread
  • Peeled slices of avocado

Preparation

  • Heat the pan and put sugar, Tabasco, and tomato. Allow them to bubble for around 10 minutes
  • Season and then check to determine the level of spiciness before adding some tabasco.
  • Create a space in the pan and fry the eggs then sprinkle the chili. Cook for about 4-5 minutes and remove the pan
  • Use the griddle pan to butter your cornbread
  • Cook each slice for about 2 minutes until the dark lines of griddle appear
  • Serve the cornbread by adding the fried eggs, avocado without forgetting to spoon around your tomatoes with a sprinkle of coriander leaves

5. Farina with Almonds and Apricots

This is a warm and relaxing dish that makes a delicious mid-morning meal.

Ingredients

  • Half tablespoon of Kosher salt
  • Quarter a cup of chopped dried apricots
  • 2/3rd cups of non-instant farina e.g. Cream of Wheat
  • 2 cups of low-fat milk
  • 2 tablespoons of chopped, roasted almonds

Preparation

  • Mix the milk and salt and then boil the combination in a saucepan
  • Add in the farina and let it simmer for a couple of minutes
  • Occasionally stir the combination until it thickens
  • Serve into bowls and then use almonds, sugar, and apricots as toppings
